No wheat, no eggs, no butter, no oil, no white sugar. But YUM! .

Chocolate chip chick pea cookies
1 15oz can of chickpeas, drained and rinsed
1/2 cup of nut butter (I used light peanut butter)
3 tbsp coconut sugar (or sugar of choice)
2 tbsp melted coconut oil
2 tbsp maple syrup
2 tsp vanilla
4 tbsp oat, chickpea or almond flour
1/4 tsp baking soda
1/4 tap baking powder
1/2 tsp salt
Handful of chocolate chips (who really measures these anyway? ?)

Mix all ingredients except chocolate chips in a food processor or high powered blender
Move into a bowl and chill in fridge for 10 minutes
Mix in chocolate chips and chill for another 20 mins
Scoop into a baking sheet covered with silicone liner or parchment paper
Bake at 350 for 14-20 mins depending on size of cookie
Cool on cookie sheet for 5 mins before transferring to wire rack
Store in airtight container in the fridge once cooled. .
